For years, doctors and nutritionists have been encouraging people to eat fewer processed foods and to get at least five servings of fruits and veggies every day. Eating that many fruits and veggies can be a challenge, to say the least. Busy schedules can make convenient, ready-made, processed food very tempting, especially at the end of a long, stressful day. So how can you get all the fruits and veggies you need in an easy-to-prepare, cool snack or meal? It’s easy: Make a smoothie!

The smoothie recipe featured here, created by Samantha, a former LMT at Peaceful Spirit, is easy to make and keeps well in the refrigerator for hours until you are ready to enjoy. It also offers many of the nutrients you need jam-packed into a powerful, delicious, super-drink. Not only is it a great-tasting way to increase your intake of fruits and veggies, many of the ingredients have properties that can enrich your health as well. For example, apples are a good source of energy, beets help improve circulation and blood flow, and ginger is an anti-inflammatory agent. Each serving also contains easily digestible protein, fiber, vitamin K and much more!

Ingredients:

1 red beet with or without greens
3 carrots
1 Fuji apple or apple of choice
1-2 Tbsp. fresh diced ginger (adjust to taste)
1/4 cup blueberries
1/2 cup strawberries
3 leaves of kale
1 cup spinach
½ lemon, peeled
2-3 Tbsp. chia seeds
2 Tsp. turmeric powder
2 pinches of cacao powder
A whisper of cinnamon


Instructions:

  • Start by juicing the beet, carrot, and apple. If you don’t own a juicer, the juice may be purchased.
  • Pour the juice from the beet, carrots, and apple into the blender.
  • Add the ginger, blueberries, strawberries, kale, lemon, chia seeds, turmeric, cacao, and cinnamon into the blender.
  • Blend until everything is smooth and the mixture is a deep purple-red.
  • Pour and enjoy!
